Onion Tarts Round Out a Brunch

Feel like a good cry? Try Marie Gallo’s onion tart, a recipe often requested by her many friends at the Wood River Women’s Foundation, Senior Connection and elsewhere.

We don’t often think of curative properties when we think of onions. But they are chock full of antioxidants and compounds that fight inflammation and reduce cholesterol levels and high blood pressure while protecting against blood clots.

Puff pastry, such as Athea

4 medium onions, sliced

6 slices bacon, optional

2 tablespoons sour cream

2 tablespoons butter

2-3 tablespoons olive oil

1 teaspoon sugar

Flour

Salt and pepper to taste.

Preheat oven to 400 degrees. Melt butter and olive oil in a pan on the stove. Add onions and caramelize for about 10 minutes until onions are brownish. Sprinkle with sugar to speed up caramelization. Sprinkle with salt and pepper to taste.

Add sliced bacon pieces, sour cream and mix.

Coat both sides of puff pastry with flour. Spray 9-inch pie pan with Pam coating and roll out the pastry so it covers the pan. Trim the edges of pastry and poke holes in the bottom so it cooks evenly.

Spoon onion mixture into the pie pan and cook for 30 minutes at 400 degrees.

Serve with salad and wine.
