John Caccia sampled a few wheat berries off a stalk he picked in a stand of wheat and noted how the berries were crunchy—not “break-your-teeth hard” like so many wheat berries. Amy Mattias held a stalk up to her nose and noticed that it smelled like a chocolatey rye bran.

The two were familiarizing themselves with some of the heirloom wheat varieties being grown by a young farmer at King’s Crown Organic Farm. And that young man is hopeful that these varieties will pave the way to better tasting and nutritious bread and wheat that grows better at high-altitude than some of today’s run-of-the-mill varieties.
