Brett Stevenson developed an affinity for the land, growing up at the Hillside Ranch along Silver Creek, which has long provided premium barley for beer like Coors.
She further honed her love for the land on three-hour round-trips to school, in which she watched sandhill crane in the fields as her bus made its way up and down the little country roads.
This year she realized her dream by building a towering mill south of Bellevue that mills the certified organic soft white wheat and red wheat harvested from 150 acres that surround the mill.
The stone mill custom made in Holland specifically for her Hillside Grain Mill, is bigger than the tiny mills most artisans use but a far cry from the equipment used in giant commercial mills. She hopes it provides a product more akin to the wheat products of Europe that she says seem more palatable to those who are sensitive to wheat products in the United States.
