Few breads embody the spirit of the Christmas holidays more than cranberry bread. And orange zest and tart cranberries provide just the right mix of sweet and tart if you’re in the mood for baking during this long holiday week.

Festive Cranberry Bread
2 cups all-purpose flour
¾ to 1 cup sugar, depending on how sweet you desire
1.5 teaspoons baking powder
1 teaspoon baking soda
Pinch salt
1 egg, lightly beaten
¾ cup orange juice or orange juice with water added to make ¾ cup
¼ cup butter, melted
1 cup fresh or frozen cranberries, halved
Grated orange zest
Preheat the oven to 350 degrees. In a large mixing bowl mix flour, sugar, salt, baking powder and baking soda. Add cranberries and orange zest and mix a tidbit more. Add the wet ingredients.
Coat a 9-by-5-inch pan with Pam Baking Spray. Pour mixture in it. And bake for 50 to 60 minutes until a knife (or, in Marie’s case, a skewer) inserted in the bread comes out clean.
