Darci Swanson shares a recipe that her mother made for breakfast when Darci had friends over for sleepovers. They’re not hard to make, she’s tells Eye on Sun Valley’s Marie Gallo. But the Dutch Babies—similar to custardy Yorkshire pudding or popovers--are spectacular to serve for friends and family.
4 eggs
1 cup flour
1 cup milk
3 teaspoons vanilla
Sugar, pinch
3 tablespoons butter
Set oven to 400 degrees. Crack eggs in a bowl. Add milk and whisk. Add flour and whisk. Add pinch of sugar and vanilla; whisk so smooth.
Put butter in pan and put in preheated oven. As soon as butter is melted, bring out, put batter in and put right back in the oven.
Bake 20 minutes. Top with your choice of fruit, powdered sugar, cinnamon sugar, crème fraiche, yogurt or whipped cream—even maple syrup, if you like.
