Marie Gallo was looking for a quick easy breakfast or lunch dish chock full of vitamins and protein. And she found it in what she’s dubbed “Keto Quiche,” recognizing that it meets the needs of those seeking to keep their carbs down.
4 carb-free tortillas, or regular tortillas
3 eggs
Cottage cheese, 3 heaping tablespoons
Tomato, ½ to 1 cup, diced
2 green onions, diced
Mozzarella cheese
Spinach leaves, frozen or fresh
Parsley (optional)
Salt and pepper to taste
Cover 9-inch pie dish with tortillas, overlapping the edges of the pan as if you were replicating a sunflower. Break eggs into a small pan and beat. Add cottage cheese and mix some more. Add vegetables, and cover with shredded mozzarella cheese.
Bake 20 to 25 minutes.
