The Sun Valley Culinary Institute is presenting an April Supper Club of fine dining.
On Saturday, April 13, local Chef Nadina Keller, owner of Devoto Gelato in Hailey, will present Tapas Night from 6 to 8 p.m. Keller, originally from Argentina, will begin the evening with pan frito con acite de oliva (white country bread pan seared with olive oil) with jamon, manchego cheese and fig compote as well as marcona lightly salted almonds and piquillo peppers with thyme, honey and goat cheese. She will follow with croquetas, empanadillas and much more delicious tapas creations, including a special gelato created for the evening.
On Saturday, April 20, Esta Hornstein will present an evening of Italian cuisine. Hornstein has been a Ketchum legend for more than four decades, but before that she cut her teeth on the fine cuisine of her New Jersey family known for their Jewish deli fare and delectable Italian cuisine.
Hornstein will present passed hors d’oeuvres of roasted hazelnut and porcini tartlets, arancini with peas and mozzarella, antipasto salad, chicken, eggplant and shrimp parmesan brown butter pasta with shaved parmesan and sautéed escarole.
On Saturday, April 27, from 6 to 8 p.m., SVCI Chef Melissa Mauselle will present her “Italy in Spring Dinner.” The Italian-influenced dinner will feature fresh-caught, seared Alaskan halibut with roasted tomatoes, grilled broccolini and fennel pollen panna cotta with honeycomb; a mixed green salad with crispy prosciutto and grilled melon; spring risotto with asparagus, peas, spinach and grana Padano.
On Friday, April 26, as a bonus Pizza Night with Rico will take place from 6 to 8 p.m. Ketchum’s own Rico Albright will present his signature gourmet pizza, along with a tutelage on the art of creating and tossing the perfect pizza. He’ll also serve up humorous anecdotes from the world of pizza making. Rico’s famous breadsticks, zesty Italian salad and desserts will be served, along with a selection of pizzas.
