Sun Valley Culinary Institute Puts Holiday Treats and Meals on the Menu

Holiday treats will be the focus of December classes at Sun Valley Culinary Institute in Ketchum.

The classes will launch with holiday cupcake and cookie decorating and will include holiday side dishes, Hanukkah recipes and holiday brunch recipes.

The classes:

  • Dec. 1, 4-6 p.m.: Holiday Cupcake Decorating with Mary Jones.

    Jones, known for her gingerbread houses, will lead students in hands-on cupcake making and decorating techniques using pastry bags and making frostings and fondant appliques.

  • Dec. 2, 4-6 p.m.: Holiday Cookie Decorating with Mary Jones

    Will include making, rolling, cutting and baking cookies, as well as icing and decorating.

  • Dec. 4, 5:30-7:30 p.m. Spanish Tapas with Chef Michael Lackey

    Lackey will teach the meaning of Tapas, their origins and how they’ve become a way of life for people of Spain.

  • Dec. 7, 3-5 p.m. Basic Knife Skills/Learning to Chop like a Pro

    Chef Chris Koetke, dean of the Sun Valley Culinary Institute, will walk students through the basics while making vegetable garnishes.

  • Dec. 9, 11 a.m.-1 p.m. Holiday Side Dishes—New Dishes for Holiday Meals

    Chef Chris Koetke will prepare an assortment of dishes that take into account seasonality while offering bold new tastes.

  • Dec. 11, 5:30-7:30 p.m. A Celebration of Hanukkah Recipes with Chefs Esta Hornstein and Chris Koetke

    Prepare to be entertained with great food and stories as the former owner of Esta’s joins the dean.

  • Dec. 12, 5:30-7:30 p.m. Holiday Dinner Party

    Chef Chris Koetke will prepare a three-course menu featuring smoked salmon, a twist on beef Wellington and red-wine poached pears.

  • Dec. 13, noon-2 p.m. Time to Relax with Brunch

    Chef Chris Koetke will prepare his favorite brunch dishes—all perfect for a holiday brunch.

  • Dec. 15, 5:30-7:30 p.m. Holiday Appetizers for your Next Gathering

    Chef Chris Koetke will share his favorite appetizer recipes that vary from very easy to more involved.

  • Dec. 16, 11:30 a.m.-1:30 p.m. Sweets for the Holiday…Fruit, Nuts, Chocolate and More

Chef Chris Koetke will demonstrate an assortment that can provide the perfect end to a meal, a mid-afternoon treat or gifts for friends and neighbors.

The Institute is following COVID precautions, asking attendees to wear a mask, maintain at least six feet of distance, have their temperature checked upon arrival and follow sanitation rules. Classes are limited to eight students.
