Taveesak Chanthasuthisombut, better known as “Dang,” has endowed Hailey with sushi and dishes from his native Thailand for 15 years. He was even named Idaho Small Business Person of the Year in 2022 for the vibrancy he’s brought to Main Street Hailey.
Dang stopped by Marie’s Kitchen recently to show the Belgian-born lass how to make his popular Pad Thai and Fried Rice. Check it out in today’s Eye on Sun Valley video.
PAD THAI
Heat 3 tablespoons of vegetable oil in a saucepan over medium-high heat. Crack one egg into it and add protein of your choice (halibut, salmon, pork, shrimp, chicken or tofu). Stir until cooked.
Add rice noodles and keep mixing until the noodles are soft. If the noodles are too dry, add a little water.
Mix together a sauce made of tamarind, white sugar, salt, vinegar, tomato paste and palm sugar to taste. Spoon over the rice and garnish the dish with a few onion strips or an orange slice.
FRIED RICE
Drizzle a couple tablespoons of vegetable oil in a warm skillet. Crack one or two eggs into it. Add thinly sliced chicken and mix with wooden spoon as if scrambling eggs. Stir in garlic, white scallions and diced carrot if you like.
Add Jasmine or other rice, and top with a sauce made of oyster sauce, sugar, soy sauce and fish sauce to taste.
